Is is possible to make a mod to allow engineers to build trenches and bunkers etc.. , I find their current role strange as the engineers actually do no engineering.

Engineers could give a defensive bonus to adjacent units or exchange 1 unit of supply for 1 entrenchment level for every turn they are adjacent. Speaking from personal experience, when I was with the combat engineers, we were much busier in the defense than in the offense.
