Which wargame would you recommend (Matrix or not) that best represents these interesting wars? Looking for the most realistic and detailed that come to mind.

Command: Modern Operations has a DLC - Shifting Sands that covers Arab/Israeli conflicts, as well as many what-ifs.

In addition to the excellent recommendation made by pzgndr, well worth checking out Shifting Sands.
