Already said,I would like to see ancient Greece(include Alexander the great's adventure) and Roman game from the WCS engine.
Also,the medieval period in Europe and middle east map is good.
Japanese medieval warring states period(Sengoku jidai) would be interesting.[:D]

Does that mean there will eventually be a patch to be able to play CoG:EE and FoF in windowed mode, or(dare I dream) widescreen resolutions?
JudgeDredd is correct -- it's the engine, and not something that can be fixed with a patch. The programming involved in making a change to the existing engine would be MAJOR, since it would involve taking the engine apart and putting it back together again. But for new engines it will be built in from the start.

I LOVE the WCS games and would like to see a 1850ish to 1920'sish type European game as a follow up to CoG. From the Crimean War up to the end of WW1 or even the Russo-Polish War period would be fantastic. However, going back in time would equally be good. In fact, what ever historical game you produce I will purchase it. I doubt I am alone.
