A half cow is about 225 lbs, net. Dressed, it’s 75 lbs steaks, 75 lbs roasts, 75 lbs ground. Cow pool is up to 10 people each of which buy at least a 1/10 share and each of which gets 7.5 lbs (or so) of each pile. All-up price is about $6.15/lb. That includes all the good stuff and is frankly 1/3 of what you would pay for the equivalent at even Walmart or Piggly Wiggly.
Cow pool shareholders often (always) negotiate among themselves for specific cuts, so one can often go home with 10-15 lbs of pretty good stuff for a net of $3.50/lb. I’m looking forward to meeting some of my cow-pool members. If they take this degree of care with their ingredients, I’m thinking there’s some recipes and friendship parties in the future.

We regularly get a quarter cow annually. It lasts us about a year for my family. Usually we get an Angus-hybrid Choice + graded animal. The steaks are worth waiting for. [8D] Our quarter works out to about $2.75-$3 / lb. for a good carcass. Why are yours so expensive down yonder (all up at $6.15/lb.)?
For what it's worth, some butchers will cut some beef strips for you from some of the tougher hindquarter cuts. Slow cook these puppies and use 'em in fajitas.
ETA: Not that I want to 'get into it' here, but there's a great deal *not* to like about grass-fed antibiotic-free beef (or lamb) producers. PM me if you're interested.

Nice tip on the fajitas, oooh yeah. I think our price is higher because these are relatively small operations; higher cost, lower output. And it also includes the butcher fees (cutting, trimming, dressing, grinding, etc..) and the locker storage fees (for them as don't got a monster freezer in the garage) [;)] They are mostly Santa Gertrudis.ORIGINAL: Chickenboy
