I know how to check required number of engines and what is being produced.

How do you determine which model (and how many if more than one model) of aircraft are not receiving engines?

If the # of engines required on the industry screen is higher than the total listed # of engine factories, and your pool of that same engine type is at 0, then you have planes that use that engine that are not being built to the capacity of that aircraft's factory total.
