First, I have noticed that if I go create a new formation and have the TE in a 3 Point Stance, when I practice a play the TE has reverted back to a Receiver stance.

Also, this isn't a bug per say, but the Punter is now only 7 yards deep, and he can't be moved in the PDS. Was there a reason for the lack of depth, or can this be looked at?

The reason for lack of depth is a hold over from the days when the game was a 2D application separate from the core game. There was limited space to design your plays so the punter had to be moved up.
 
That restriction has been removed (you can desgin plays using a much larger portion of the field), but the punter position code had not been updated yet.
