Some questions

So Im playing the old BTR, and some questions/opinions based on that.

1) Would it be possible to add a new order to your fighters "return to patrol area" or "change intercept target". As it is now, once you have committed your fighter unit, it is impossible to change that desicion. So if a new raid appears, you cannot change the intercept-target for a previously committed unit. Also if a raid proves to be uninteresting to intercept, you cannot order your fighters to return to their patrol area.

2) Would it be possible to have some sort of auto-scramble for fighters at an airfield that is approached by enemy fighters or bombers. Like, "if enemy raid is within 100 miles and heading towards the base, scramble all fighters to a patrol mission above the base".

This facility already exists.

Click on list raids, then click on the raid you assigned fighter units to intercept but now wish to change the orders of. Click on recall and then re-assign intercepting unit to patrol. You can then re-issue orders for it to intercept another raid as desired.

But when I click "recall" the fighter unit turns blue, RTB and is unavaliable for any more orders.

Don't click recall - you should get the list of assigned flights, so just deselect the flights from the list.

When you have the list of Raids click on the raid you want. Click on the recall tab above the Raid list. This will list all units assigned to intercept and give the option to RECALL or PATROL each unit. Click PATROL and exit the list. The unit will now appear on the screen in Patrol mode and can be re-assigned as desired.

What both Harley and von Shagmeister say is correct but it is not available in one situation ie a raid which is not listed because it is returning to base.  For example if the Axis scrambles night fighters to intercept an 8th AF raid, by the time the night fighters get airborne the raid may have been turned back by day fighters and therefore it no longer appears on the raid list and therefore no opportunity presents itself to redeploy the night fighters (who may now no longer be able to catch up with the retreating raid) to intercept another incoming raid.  This delay can also occur to day fighters which are based far away and in a different Luftflotte command from the incoming raid and therefore might have a delay of 20-63 minutes to get airborne.
