If you've 2 screens configured and only 1 really attached no wonder you can have problems!
Configure properly for your lone screen and it should be ok ... [8D]

You could try setting a different resolution in the ufo-et.ini config file first however this problem has been posted 2 or 3 times on the Developers forum and in each case it was fixed by first uninstalling and then re-installing the video card drivers.
See the thread linked to below where someone experienced this exact issue:
Resolution incorrect, image too far to the right

Here's the linked to the thread by Galfar, one of the Devs, on where to find and how to change things in the ufo-et.ini file.
Ufo-et.ini tweaking

Hopefully one of those will help your problem.

Not only can I only see half the intro screen, and the various options, the ART is displaced as if split over two screens, but the clickable areas for those boxes ARE NOT!

I have to click in the middle of the screen to get the game to accept clicking on the buttons that are split in two at the right edge of the screen.

I've tried the suggestions on reinstalling the drivers - no luck. I have a disabled intel integrated graphics card, with the only active graphics card being a geforce fx 5500 256 MB.

OK, I finally fixed this - it was the anti-aliasing, after all.

I had to randomly click areas of the screen where the "minus" button for anti-aliasing WOULD have been, had the display worked properly, until I reduced it to 0/disabled, THEN not knowing where the buttons were to exit the settings while keeping the changes, I THEN had to randomly click in areas looking for it (and hoping I didn't find a "default" or cancel" button, since I couldn't see that side of the screen's graphics to tell what kind of buttons might be present).

Once I succeeded in this (about 20 minutes of frantic mouse-clicking), I was able to play.

It would really be nice if the game had a "Settings" option in the "Game Menu" area, that didn't involve actually starting the game, so as to be able to change setting that are crashing/making unplayable the game, without having to muck inside ini files.
