Question on Aircraft Carriers

Is it possible to limit the planes that can be Carrier based??

Best way to do this is through the carry capacity. Set CV capable planes with a low weight and non-CV planes with a high weight.

Considered this possibility, but then, if I create a TF with 10 carriers then I could carry a B-52, right?

Yes, but that would not be particularly efficient.

From this passage in the manual, I would extrapolate that no, you couldn't carry a B-52, if it's weight exceeded the carrying capacity.
Manual, section 9.1 p. 51
"....The truck can, for example, carry infantry or artillery. Carrying is only possible if the weight of the passenger is lower than the Carry Points of the subformation type in the transport role. So, a truck (Carry Points = 20) can carry two artillery (weight = 10 each), but two trucks (carry points 20 * 2 = 40) cannot carry one light tank (weight = 25)..."
