What does define a fortress...as a fortress?

-I was looking at the editor in the attributes for the diverse locations and I saw there is no special editable attribute for a fortress. In other words, they seem to behave as a "normal" city. Or maybe I´m missing something?

They are a location type and a landscape type. In the location type menu you can alter some of their stats like hitpoints and buildcosts whereas in the landscape type menu you alter their fort characteristics.

While on the subject, what exactly kind of protection does a fort or fortifications or a City provide its defenders?

The defensive bonuses of a Fortification or Fortress location type are provided by the Landscape type that they map to. These Landscape types provide greater automatic and total entrenchment plus most SFTypes have negative modifiers when attacking into them. SMGs and Infantry Guns being the exceptions (that I know of).
A Fortification is equivalent to an Urban hex but a Fortress is better than an Urban hex and is the strongest defence you can have. The benefits of the location are given how ever many structural damage points it has so the attacker needs to destroy it completely to make a difference.
I agree it is not very obvious how it all works, but once you understand I think it is a very good mechanism. The only thing I would like to see is the ability to add multiple Locations in a hex. So you build forts on Airfields for example.

Great...I could finally build 5 fortresses in a single hex for ultimate defense.....

You could define a different fortress type that was also an airfield, a port, or both.

Ideally though it would be nice to be able to add multiple locations, and to have some of them not map through to a landscape.

Every location type must map to a land type. However, you could define multiple land types (e.g., normal fort, really tough fort).
