Am I missing it, or is there a way to tell the differing elevations on a map? outside of hitting the fire key and seeing if you have an LOS?

Even then, it doesn't really tell you the elevation levels, etc.

Also, how if you give a fire order to you give a STOP firing order?

1) It's unable to know the elevation levels, since this game is a purely 2D one and the game never introduce the conception of elevation levels.
 
 2) Just order the firing group to defense.

Look at the terrain.. there are visual clues.

move the cursor over the terrain with the right button depressed.

terrain info is displayed at the bottom left of screen.
