What are these 'supply convoys' that come into Cape Town all about? How do you utilize them? They are listed as CD coastal Defense and only stick around for 2-3 turns. I've looked all over but don't seem to find any info on them.

When they disband they dump their device cargo into the pools. Often tanks and so forth. Gives you a nice bump in device inventory to fill out your units.

The merchants and tankers listed in the "TO&E" of the convoy also dump a large amount of supply and fuel at Cape Town that you can load for other bases.

Do any more surface or land units specifically appear at Cape Town or do they all go into the 'pool'?

Take a look at the Ship Availability and Ground Reinforcement Schedule, everything marked Cape Town will appear there. Only the CD ground units with convoy in their name arrive at Cape Town only to go into the pool.

That shines a bit of light on things. Thanks.

Yup, thanks for the clarification.
Is it worth specifically sending any ship units to the UK to pick up ground units or will the game transport them off-map to other off-map places like Aden or Cape Town?

Air units can be transferred by using the 'transfer to base' button, ground units will need transport I think.
