Does the ANW map include the possibility of include populated cities, bridges, buildings and facilities in general others than airbases or ports?

Yes it does if you really wanted to go into that detail and produce scenario files of, in ANW terms "immense proportions". More units of any type included in your scenario and the larger it will become. Read this as run slower...
It's not possible to simply place large tracts of populated or built up areas onto your map. We're dealing with a Tactical naval simulation and not something that models say carpet bombing of cities a la WW2. You could maybe construct Installations that use the Lat/Long offsets to automatically place buildings. From my experience it simply wouldn't make much sense so I've never looked at it in detail.
The Bridges, Wharves, POL facilities etc etc. Are what we could describe as relevant targets for military operations. Most databases wil also have buildings etc that can be used to model Civilian buildings etc placed close to intended mission targets and exposed to collateral damage. This is now important with explosive blast radius now being modelled.

All buildings and structures in an H3 scenario are inserted by the author. If he wishes to go down to that level of detail, is available to him. It is possible to re-create a city building by building, but few designers elect to do this. The more detail you have, the larger the scenario will be and it draws incredible amounts of CPU power to run.
The largest H3 scenario ever written is the "Axis of Evil II" from the PlayersDB. The designer wanted to have many of the smaller buildings you mention, but it really runs slowly. You can give it a try for yourself to see the obstacles involved with such detail.

I was thinking to develop a scneario/campaign on the Vietnam War, in particular missions around Hanoi. Some Rolling Thunder, LBI & II operations for example.

Good to hear of your interest. I have re-made a scenario for Thanh Hoa bridge (originally written for HCE) so, hopefully, a good many of the units you might require are already in the PlayersDB.
If you decide to get this game, let me know and I can get you a copy of the scenario for testing.
