Masters of the Air by Donald L. Miller is a really good read. I brought it with me when I went to Europe last winter and I couldn't put it down. When I did my brother would snatch it and start reading.
Like A Time for Trumpets by Charles B. MacDonald it's a perfect blend of history and the human experience.

@H.Sarge: I am looking for a general book, not focused on single unit or raid. A general overview on the Allied Air War over Germany (and maybe Italy if there's something interesting). Timeline 43-45.

For general reading on that period take a look at Martin Bowman's works:
Clash of Eagles
Battles with the Luftwaffe
Might want to read the official USAAF history by Craven and Cate. It's more general than one would expect from an official history.

Clostermann's The Big Show is an excellent class. Galland's The First and the Last. Williamson Murray's The War in the Air, 1914-45.
I have some odd 50 aviation history books in the shelf but those were the few first to pop up in my mind.

For a grand overview of Bomber Command's involvement you can't beat The Bomber Command War Diaries: An Operational Reference Book, 1939-45 by Martin Middlebrook.

Thanks to all for the suggestions. I'll buy theese books from Amazon, unfortunately there is nothing translated in Italian (my primary language). I hope that they're not too difficult to read.

I had the issue go the other way, most of the books I wanted, were written in Italian or German

I am currently working my way through a few books.
Mostly about the building of US Air Force...
A Short History of Air Power <James L. Stokesbury>
Winged Shield Winged Sword : A History of the United States Air Force
Interesting Biography of Ira Eaker:
Air Force Spoken Here : General Ira Eaker & the Command of the Air
Written by his Aide James Parton.
None really have any effect on play of this fantastic game but interesting reading IMHO.
I am interested in finding books that describe and detail Strats & Tactics as well as specific operations from both perspectives.

Caldwell's
Luftwaffe over the Reich
Jagdgeschwader 301/302 "Wilde Sau": In Defense Of The Reich with the Bf 109, Fw 190 and Ta 152 by Willi Reschke.
Any of Jochen Prien's unit histories on relevant units. There are numerous other unit histories available by other authors also (Lorant, Crandel, et al) which provide outstanding insight into the actual operations.
Freeman's
The Mighty Eighth and
Mighty Eighth War Diary (expensive - look for used copies or better yet, use inter-library loan) a must read if you are serious.
Any of Martin Middlebrook's books on specific BC operations are outstanding.
There are a ton of sources out there - I've only named a few I have. I am sure Hard Sarge has recommendations - his library is even more extensive.[:)]

I think I got all of Prien's english copies, outstanding books if you can afford them, Lorant is great, Crandel=Caldwell ?, I don't picture Crandel off hand ???
or you mean, Jerry Crandall ?, he is good

Freeman, is the Eight, my copy does not even look like a book any more, HARD to believe it is not a soft cover copy, nothing HARD about it any more

depending on the book, almost anything by Chris Shores (but, those will also be very detail, and can be dry reading)

Theo Boiten (LW Night Fighters)
Nick Beale
John Manrho/Ron Putz
Chris Bergstrom (more Eastern Front, but good detail)
Chris Goss (lots of the human side, both sides of the battles)

Max Hasting's "Bomber Command isn't a bad read.
Robin Neillands, "The Bomber War" is very very good. Thought provoking on the entire concept of Strategic bombing and the wartime mindset and makes a good companion volume to Miller's Masters of the Air
"JG-26: Top Guns of the Luftwaffe" by Donald L. Caldwell had some good insights on German gunnery training and formation flying.
