Creating an Extinct Volcano (Suggestions Needed)

This really involves nothing more than creating a polygonal basin in the interior of a mountain. However, I'm not sure how to get there. Normally, when I build a map, I draw in layers and add islands (hills/mountains) when I get to the point where they're needed. I have a very specific routine that I follow, one that produces good results with virtually no bad layers. This volcano deal, though, has pretty much got me stumped. Thoughts?

Treat it like you were making a valley, but then ends touch.

Does that make sense?

i.e. Treat it like a pieve of pineapple (the circles with the wholes in the middle). You cut it in half and put it on the map so the ends touch. You have to do it that way as you can only "Add" in the MapMaker, not take away.

Draw an altitude "donut" for a particular layer, and then divide it like you would a polygon in MM?

Yeh, two fouur sided semi circles. Overlapping to make them join up smothly.

I'm making yet another map for the Italian campaign, this one tentatively named "Anzio Breakout." The extinct volcano that I made reference to is actually part of the Alban Hills, and it's basin is the home of Lago Albano:
