How do I use artillery that is assigned to me? I can't figure out how to call in a barrage with my SP 105mm.

Select a HQ unit that has a green star next to it in the HUD (indicating that it is contact with the FO). In the Orders phase, right click to choose the "Spot Indirect Fire" order, pick the type of sheaf and target it where you want it to go.

They won't appear on the map, will they? So where can I see artillery has become available? I didn't notice it while playing the demo. 

It depends on the scenario. Some scenarios start with artillery available right from the start, others have it available later as a reinforcement and others have no artillery at all. The best place to check is in the initial scenario force list before you get into the actual battle. That will tell you every asset you have and whether it's a reinforcement or not.

You can also just pull up an order menu for a HQ that is in contact once you're in the battle and see if "Spot Indirect Fire" is available. If artillery arrives as a reinforcement, there will be a message in the event list when it is available.

Right click any unit with a green star. The green star means they have radio contact. When you right click them if the off map artillery is available it will be one of your options.
