Infantry skills

Good morning everybody from germany,
there are a lot of different infantry, but what are there special skills e.g. Pioneers?

Pioneers/Engineers are better at attacking hard targets (bunkers and tanks(?)).

Not exactly.
Pioneers (and all other military engineers which have flamethrowers) are good against structures and entrenched enemies.
Bridge engineers (with pontons) serve as bridges for other units when they are positions on rivers.
Paratroopers can paradrop from air transport on any free hex
Mountain troops have a special alpine movement that allows them to walk very fast on mountains.

ok thanks. Whats about the granadier? Does he just has some better skills like the wehrmacht?

I think the Grenadiers have things like heavy and light machine guns in quantity.

Pioneers can not end up facing a rugged defense.

Yes, granadiers are just a "heavy" version of wehrmacht: slower movement, but higher attack ratings.
