If I set a game up with objectives will the game end when I or the A.I meet them, without having the option to continue playing despite having won/lost?

I think it would be best to have objectives so the A.I aims for something but I do like being able to carry on regardless of who acctually wins.

Nope! You can continue to keep playing the game after victory conditions are met. [:)]
