As the Allied player in late Dec 1941, I seem to have scores of tankers in the west coast and more keep showing up. Given a lack of escorts, should I try to used them all (auto convoys, ect) or is this the war's supply with few coming later?

You will get more, but the early war supply is important to preserve. If the Allies have any shortage of merchant ships, it will be in tankers especially long range ones.

Get them moving with a load ASAP to Aussieland. Do this before the Japanese player has time and resources to direct toward interdiction of the route between the US and Australia. Most of his subs are tied up in other places so get a move on, by the time that load reaches Aussieland, you should have a spare DD or DMS/DM or PG to make the trip with them.

#2: Top off Pearl Harbor
#3: Somewhere in the South Pacific: As you get US LCU's eventually you put a redoubt somewhere in the South Pacific: New Caledonia, American Samoa, maybe Canton Island, etc. Since the Japanese will be able to put the base under siege until the USN gets the upper hand, you'll want to have plenty of stocks of supplies and fuel.
#4: By late spring I usually put a few hundred thousand up on Anchorage just in case a northern campaign develops, but this is purely something to keep your tankers busy and prevent you from losing fuel as the West Coast ports top out at a million. A similar and easier task is to use the tankers to move the fuel to San Diego, Seattle, or Vancouver just to keep San Francisco and, to a lesser extent, Los Angeles from topping out.
