During ASW conducted by helicopters is there an ideal speed
and height to deploy sonobuoys ?

I am not sure if there are release restrictions for sonobuoys in the database. At most I would think that there is a max altitude for theiir release. As long as you can get them to deploy with the hotkey I don't think that speed/altitude of the launching platform will make much difference. Different ballgame with dipping sonars though.

It looks like sonobuoys can be released from very high heights. Torps at about 1000' or so.
