Kind of an odd thing to ask questions about but even the starting menu is confusing

There was a game mode where I could choose to be like a corporate entity - but now I cannot find it.
Sometimes I can be Ancient Ways government, other times I cannot.

WTF is going on ?

If I understand you correctly, you're talking about choosing the government type
Corporate Nationalism I believe. You can select your race's government type if you
play a custom game. The selection is made after you've selected what race faction you are
playing. You can also mod a race file to use Corporate Nationalism as a Special government.

I think being a "corporate entity" is one way of playing where you automate a lot of other things, not a specific game mode.

No Corporate Nationalism is what I mean, however it seems to only come up inconsistently as a choice - I'm playing humans now... perhaps it's race specific ?

Corporate nationalism is not for everyone. Humans got it, and may be the only ones.

It seems it has to do with Theme. Idk what that means specifically.

Corporate Nationalism is a "core" racial tech for humans and possibly some races. It should be described in the manual and the galactopedia.

I have never tried it, but it merges the civilian and state economies, and may have its share of drawbacks...

It's really not a good government style. It poorly simulates a social society based on real life bias. Basically all it does is make you economically superior to everyone else for a short time, and the longer you have the government the worse it gets until the negatives outweigh any positives it may have left and sends you crashing into debt.

Only a small number of races are able to use this by default, but that can be changed with simple modding.
