Whenever I try to air transport freight, only supplies are transported. Is it possible to transport fuel or ammo?

If you airlift it to a friendly airbase you can, and you can lift a lot more stuff than just an open field drop. If you want your tanks to have gas next turn park them on or next to an airfield you own and fly it to them.
