What do the numbers next to the "red heart" in the results of the the battle? Because as I understand further concern cohesion ?

Red heart is number of hits inflicted upon enemy. For example, in your battle Duball inflicted 15 hits to von Heering but suffered 34 hits. Hits are translated into men, horses and cannon losses reported in red text (for example -15580).
Remember, units are made up of 1 to 9 elements (depending of type). IIRC, one element has 10 hits. For example, unit with 5 elements equals to 5x10 = 50 hits. If such units suffers 50 hits during combat it is eliminated completely.

what these numbers mean ? Red/green? And why french leader is better ? My 3-5-1 > 3-0-4 ...

It's composition of your army. It gives you how many elements of infantry, cavalry and artillery you have. The numbers are green when you have more elements of that type than your opponent.

I believe the French leader is better at hiding (his 4 vs. your 1?), so that's why you can't see the enemy setup.
