I feel like I am missing something. In all of my scenarios every infantry and cavalry unit is only represented by no more than 15-25 sprites/men/avatars. But when I watch let's play videos, people seem to be getting upwards of 100 men represented per unit.

What am I missing? Is there an option to show more men per unit?

In the Options screen you'll find Sprite Ratio. The default is 0, (4 men/sprite).
