Is it possible to set up a computer vs computer scenario, start it, and then watch how the game mechanics operate?

No. It defaults to one side (USA?) being human.

Too bad. AI vs AI might have given you a good way to showcase your AI and game engine at the various experience levels, and also educate us about American Civil War strategy, tactics, combat and logistics.
