If you keep units alive over the course of the game, will they gain any additional combat stats, experience, etc?

Yes. Units which eliminate an enemy unit in combat have a certain chance to be promoted if they survive the battle. I particularly like it when one of my skirmishers makes it to a 3 or even a 4 rating!
