Hi, a silly question: If accidentally (or not) i don't spend all the production points available in a city, the remaining points are lost that turn? Or something generic like Political P or supply is produced?

Yes. If you don't instruct the city to produce something with all its available production points, then nothing is produced that turn with those wasted points.
