I am reading the manual and at the section of special orders and movement and the game does not have, that I can see, the following options per manual.
Split stacks
Delayed move
Distant unload
Are these options that have to be enabled in the options screen?

You can't as such do a delayed move (ie order a formation to start to march on day 2) but there are a couple of tricks that can compensate.
If all your corps are in the same army (check out the war-room posts on stacks etc as this will explain the nomenclature), then you can order them to move 'at the same speed' so all should arrive in the target province at the same time. Equally it is less key for them all to arrive as the 'march to the sound of the guns' routine may bring any stragglers to the battlefield in any case.
If its too early in the game for this type of command (affects the Allies pre-1808 or so), then you can sometimes select a march route that means a formation takes a bit longer (this can be useful as the algorithm by design picks the quickest option).
You need to split stacks manually. Simply drag a formation out of its current stack and place it on the map - it will then form a new stack. You can then move formations between the stacks using the tabs at the bottom of the screen.
Distant unload is a little wavy blue button on the move orders. Select this, move your naval (or river) transports next to the province you want to invade and then click on the target - you'll see it flash blue as confirmation.
