Curious if the campaigns have reinforcements coming in at later turns in the day or night? And if a player can choose from a menu of forces?

Yes there will be reinforcements entering at a later time in the campaigns. This could be later the same day, during night or during the following days. You cannot choose the forces from a menu, you'll have to use the forces allocated to you in the scenario. You can check the Order of Battle Display menu for when units enter the scenario.
