What's the process for playing a server game? Like finding an opponent and connecting to the server.

The mechanism for setting up a server game is described in the manual.
You can set one up as an open invite, but you take pot luck with whomever accepts. Posting in the opponents wanted sub-forum here is better as you can describe your level of experience and what you want from your opponent. Most also post suggested house rules which is a good idea.
