Would Taking Poland Be a Good Beginner scenario?

I understand that even though they Poland was taken in 3 weeks, it wasn't exactly a walk-over (or was it). Primo Levy wrote that his brigade was holding out fine outside Warsaw. But of course no matter what, once the Red Army came in, and Stalin sealed not only his own but also the Poles fate. But I think a Poland scenario w/out the Soviets might be a more interesting scenario if not more balanced.

One of those scenarios does have a lot of units

This is a pretty big scenario. I wouldn't make it the first one you try but if you have played a few and under supply, etc. then it might not be so.

I think Korea 50-51 is the best scenario to start with. It looks bigger than it is. Play as UN, it's fun as hell to build the Pusan Perimeter and once stabilized land at Inchon cutting off the supply to NK units south. Of course it's awesome to push north and trigger Chinese intervention.
I think it's one on the better more balanced scenarios and pretty much will play out like the actual conflict. I've tried playing as NK but I don't think the UN PO is as good as the NK PO.

So i tried the Korea scenario, but the UN forces were greatly outnumbered and within three turns the entire peninsula was red. What did I do wrong?

The peninsula being overrun is historical. You should end up in a few hexes around Pusan and 99% of your starting troops destroyed when your reinforcements start showing up. At that point the norks should be too exhausted and unsupplied to successfully attack anything. Then once your reinforcements build up enough you roll them back to the north until the Chinese return the favor.
