I'm sure someone can point me to another post or manual page but exactly do land units burn through supply. Does movement and combat use supply or is it just determined by the units location?

Location, and that is sub dependent upon movement costs, weather, HQ location etc...

There is no "supply" pool, if that is what you mean, nor do units "use" it, per se. They simply are given a supply level at the start of the turn based on how far they are from an HQ, town, or other supply source-moving or attacking doesn't reduce the level. Note there have been discussions about having an oil pool.
