I know discovery is random, but is the tech categories (eg Applied Chemistry Engineering etc) are discovered in a sequence. For example do you have to discover all the techs in chemistry before being able discover Applied Chemistry tech. Do you have discover and research or just discover to move on?

You do not unlock new fields by discovery only through research. You must research 3 techs to unlock all subsequent fields. This is critical to early research management to ensure you get necessary core techs.

Also keep in mind you don't choose the category you discover things in, so you may want to hold off on researching more until you discover important techs so you have less chance to go without them for s long time.

So to summarise here, if I fully research 3 discoveries in Chemistry, theoretically the Advanced Chemistry will become available? What about linear techs, do you need to research all of the the tech? Is there a Manual reference to this? Unless I've missed it no reference of this in 5.13

Research any 3 techs in a given box and it'll unlock all boxes connected to it for discovery. Linear techs are incremental improvements; to get the full improvement you need to research the entire thing, but costs for those techs escalate per point of progress you make, and you get improvements to your capabilities equal to how much of that linear tech you've already researched.
