Is there a way to pause the game during playback?
Is there a way to see the playback a second time?
Is there a way to control the speed of the playback?

No.
No.
There's a toggle in settings for slow/fast playback, but no finer detail.

If you're watching your opponent's turn in PBEM or Hotseat mode then pressing Pause Break on your keyboard should pause the game, and then just click OK to continue.
