Finnaly i bought the game and am planing to start a grand campaing as the Soviet Union. I recently played some smaller campaigns with Axis difficulty 125 for morale and 110 rest and it was pretty easy.

To get both realistic and challenging gameplay, what should i choose for general difficulty level for grand campaing as Soviets ?

Start the campaign at 110 and see how it goes. You could up it to 120 if it is too easy after the first game (or even during it). I would hesitate to go to 125 in the campaign, but if you need it to be challenging to you go for it.
