What does the S, M mean on weapons e.g particle beam (s) or particle beam (m)? Is it just size?

Size - Small, Medium, Large. Each has different stats.

Not all stats are different.
They have different damage outputs, but they still have the same range between them (and I think the same fire rate). So if you put M and S missiles on a ship, they'll both fire at the same range and simultaneously.

For most weapons, an M is basically just two S's. Some M's will have a slightly better fire rate or slightly better/worse intercept fire rate. All M's are more efficient when it comes to crew size. ex: S takes 5 crew but M takes 8 crew, so 1 M is more crew efficient than 2 S weapons.
