I've forgotten from the days of FPRS how to get the artillery to drop minefields and also how to change the ammo type. Thanks.

Ammo loadouts are based on the scenario designer's inputs. You can only shoot the ammo you are given. Worth looking over your IDF assets at the game start to see what they have available.
