Screen vs Hold

I'm trying to understand the merits of choosing to end a move with Screen vs Hold? It seems choosing Hold offers defensive benefits but there has got to be a cost which isn't clear to me in the manual. What are the pros and cons of each option and if you're so inclined, when do you choose one over the other?

Think of Screen as a unit only making minimal use of cover and concealment when stopped, Hold is as you described, units intend to stay in that location and fight and are making maximum use of cover and concealment. If you a unit with a Hold order is given a movement order, that Hold will delay the execution of the move. Often when moving, I go with Screen until I reach my objective or there are some other factors.

Wish we knew more of what is running under the hood. What is the defensive bonus of Hold? What is the bonus of screen? 10%/20%/80%?

Totally me too. Especially as much as I also tinker with boardgames like the C3 series.
