If RTW2 worked ok on it then RTW3 should as well...I'm not sure how this would work, however, with the Steam release as I have little experience with Macs + Steam.

I've used Parallels Desktop for years and it works fine with it using W11 on Parallels, if you want to go that route.
I think last time I looked at WINE there was not a version for newer versions of OS X, so it might depend on what version OS X you have.
[edit] This is on a brand new M2 MacBook Pro, but I had SAI and SAI Campaign running on my older Intel i5 MacBook Pro so it should be fine either way, older or new Mac.

Running on M1 Pro Max with Parallels/Windows 11 Arm and it seems ok. Just started to play.
Couldn't get PlayonMac program to work.

PlayOnMac/Linux is just a front-end for WINE. Basically a bunch of scripts that configures WINE for the game. It seems they don't have a script for RTW.
I guess since the engine hasn't changed a ton, if RTW2 worked fine, then RTW3 with the same or more recent WINE version and same config should work also, regressions in WINE are rare nowadays and RTW was platinum on Linux, meaning works 100% like windows.

I had a GUI software on Linux to manage WINE and winetrick easily, seems there is similar for osX called TRIX.
Also note that you may have to "WINE" a version of STEAM too to download the game.
As a side note for the developers, a lot of "multiplatform" ports of videogames has been done with the advent of STEAM deck and the Humble Bundles. I know a lot of the smaller games (in term of tech and power needed to run) that could not afford a native port, a rewrite or to implement a front-end, simply bundled their .exe, WINE and necessary scripts, in a Linux/Mac executable.
I know back then there was only Ryan Gordon that did.most of the porta, and he got funded to do it free, IDK if he still does, but it could be a cheap and easy way for RTW to be PC cross platform.
A big issue though would be the font, you will need to ship RTW with its own font probably under GPL license to avoid having GUI issues and Microsoft copyright infringement and old Linuxers branding you evil proprietary croon, while playing your closed-source game.

I did a quick test with Crossover (a commercially-supported distribution of Wine for Mac) on M2 Pro Macbook and it seems to be working. There was an issue with included .NET installer so I tried to install .NET 4.7.2 using Crossover's software list, but it had issues as well at the end of setup. Nonetheless the game works when started via Quick Start shortcut. I haven't done any extensive testing as I'm going to run RTW on Windows box. Note, Crossover is a hit or miss (just like Wine is) with a lot of software, something to be aware of when deciding whether it's worth purchasing...
