Even in 1970 the AI keeps building floatplanes, as well as the other pre-jets. Weird.
Also it seems like research is a little fast on the larger fleet sides, with jet-capable carriers showing up in the mid-40s.

AFAIK research is somewhat proportional to budget=larger fleet size results in faster research

What setting would you recommend for realistic progression on very large?

I would say that one thing this game needs is a higher setting for technological diffusion between countries. If one country begins using jet aircraft, everybody else should have them within five years or so, either by being given/sold the tech, stealing it through espionnage, or discovering it on their own with a bonus from seeing it happen in another country. Certainly if an enemy uses a tech against you in a war, you should have a big bonus to develop that tech yourself.

AFAIK the game already has tech diffusion differences depending on tech. Some techs are copied quickly because they are easy to copy,.e.g. turret arrangements.

On the other hand, metallurgical processes for plate manufacturing are tacit knowledge and very hard to copy.
