So in game the range of action points/strike range can only be set to 25 hex at max, but I seen this extended on other Strategic Command games, how do I do that?

Yes, they can be increased via research upgrades, either manual ones (requiring the expenditure of MPPs on the unit) or automatic ones, that provide a boost automatically to all relevant units.
