Is there a way atm, to fire a torp, that follows a track so I can dog leg into target, hiding my firing position?

If the torpedo is wire-guided then yes, you should be able to remote-control it after launch.

While guiding, the text "WIRE" should show under the sub icon.

You select and move it just like a ship, sub or aircraft
