What can you do to defend and kill subs and possible surface raiders?
- Allocate 10 escorts or none
- Place DDs and CVs on the convoy lanes in attack mode
- Build merchants in advance because they take time.
Any other ideas? How to optimise fleet movement? Should they go in fleets or alone?

All that and I was also building eventually 2-3 heavy bombers with anti-subs advancements. It can help in some situations. Once not needed anymore, they can be changed to other types such as strategic bombing.
You can also attack the subs bases. You can gamble that air defense there (fighters) might be a beat-up unit from the Eastern front recovering there. Or if you know damaged u-boats are at the base, you can simply go and take the loses hoping you can finish one off.

Build MMs
Build escorts
Build bombers
Build tech
by 1942-1943 if you did all this they Germans will be taking more than they give.

That is the strategic side. I wonder more about the tactical use of those.
E.g. is this a good use of the resources?

Hum... that is a lot of oil. In 1940 (even 1941), the UK can run out if it is not careful. Even more so if MMs start sinking...

The oil game mechanics make this not a feasible defense plan. Also the subs would just go out a bit further.
If you want to stop raiders keep a reasonable fleet at sea at the edge of their movement so on your turn you can move and attack. Keep a reserve fleet of smaller ships to do the scouting and get the +1 searches.

The reason the opponent is doing it is that this way Germany can do either of these thing:
- attack the supply lane on the turn subs leave the port but then the subs must do it within range of the enemy land based planes for one turn going from and to port
- skip one turn not attacking the lane going in and out of port
