Using two joysticks

I've got X36F/X35T as Joystick 2 and CH Pedals as Joystick 1 (both USB). Is there anyway I can map my pedals to work as button presses (for controlling roll etc) whilst using the X36F/X35T setup as my main joystick?

No clue in game, but you should be able to do it with a profiler. That's basically what they are for.

Do you know of a profile that would make my saitek gear and the ch pedals appear as a single game controller?
