every ship has a crew experience in game. But in the database-editor, often there is 0 experience for night and day. Where does the experience come from?

It is explained in manual for editor(s).

If it is set to 0 then it will be set in game according to nationality and ship type depending on year.

Page 16 in the editor manual.

Ships given a 0 in either Exp Night or Exp Day will have that Exp rating set from a table.

The table and some qualifiers are also on page 16.
