Research, all on one or spread out?

Is it better to research 3 different stats for the same unit or dump it all on one stat making it extremely good in that area?

Well, since there is a cap on what you dump onto one stat in one turn, you are probably going to have to spread it out somewhat.
A lot also depends on what unit(s) you are talking about. For Tanks, get both Evasion and Land Attack. Both are cheap and effective. Get Evasion to 9 and most units bounce off. Get it to 10 and you are darned near unkillable by everything except opposing tanks with 9+ Land Attack (no other units can easily get that high by the time you can have 10 Evasion tanks).
CAGs also benefit from stacking up. Evasion, Air to Air, and Torpedo are all nice for CAGs. Adding to Range, Bomb, or Ground Support is just icing.
I think the 'best' way to research at this point is to concentrate on a few units and make them extremely unpleasant. If your opponent doesnt keep up, he can in a world of hurt pretty quickly. And the WAllies can use the same strategy that NATO used in the Cold War: Force the enemy to outspend himself trying to keep up technologically.
