how do you fight a detaileds battle all i get is quick battles all the time?

go to the options menu and toggle off "always quick battle" optional rule

And you gotta have at least 30,000 troops on both sides , if not it will be quick battle

Yeah, the last is a little surprise you don't get any warning or notice about. You just suddenly find yourself in Quick battles with no choice or message.
