Why can't I put 3 corps into an army like the manual says, playing 1805 standard scenario as the brits. the pop up box over the divisonal display indicates I can have 270000 men and 3 corps

There is a known bug in 1.0/1.1 with adding corps/divs into armies - you can get different results depending on the sequence of adding things, which is counter intuitive.

WORKAROUNDS: You may have to take some divs out of the corps, add it, and then put the divs back into the corps. Alternatively, you may need to take a div out of the army, add the corps, and then put the div back. You should be able to put lots of corps into an army: the restrictions are about total divs in the army (18 for everyone except France and 20 for them], and divs directly in the army.

Eric is working on this for the next patch.

also, you may want to keep the army in place, the turn you try to do this, as if you start moving around, the troops can be left behind
