so far, I can't double-switch with my pitcher. Actually, I haven't tried to double switch with any other position either, but I assume that won't be a problem.

I'm pretty sure it works if you swap positions (hit L for your lineup) between your pitcher and another position first, then substitute the players for guys on the bench. There's kind of a weird pause while it does so, but it works. Shows up as the position player being a pitcher in the box score after the game too.
