David,
Is career mode optional? For instance if you just wanted to sim one season?

Hmm well yes and no. There isn't a 'real' option to skip career mode if you want to play a full season. But if you build your league to be all-pro level, then players are only there for one season and you have to start a whole new team at the beginning of every season. So, the work around is there.

David,
I don't understand what you mean by the players are only at the all-pro level for one season and I'd have start over with a new team the following season.
Bottom line, I want to have a 12 team professional league (I don't care about HS or college), which may expand each season using real-life players with their real-life attributes. I would like for the game to keep track of single season or career rushing yards or whatever stat possible so after 10 seasons I know who the all-time league leader is and what the single season record is for whatever stat. I don't mind keeping track of the financials externally from the game, although I don't want the game to tell me this player is a free agent when I just signed (externally from the game) him to a six year deal. I would like to be able to export gameplans and depth charts via email to the other GMs for their changes. I would like to capture highlights to post on our website. I would like to furnish each team with their own unique helmets, jerseys, endzone art and midfield logos via external game program. I would like to keep track of team records and season to season team stats. I would like to modify the players year to year, not have the computer tell me when his talents are diminishing.
IS THIS GAME FOR ME?
